Florian Bellanger Biography

Bellanger was the executive pastry chef at Fauchon before founding his own firm, where he managed 24 other pastry cooks at the Tea Salon flagship shop in New York City, a renowned French Epicurean emporium of cakes, cookies, ice creams, and sorbets. There, he became recognized for combining unusual tastes, such as eclairs flavored with orange zest, passion fruit, or coconut, and raspberry marshmallow cake, Toulouse violet ice cream, and raspberry-chili pepper sorbet. From 1991 to 1994, he worked under the direction of famed French pastry chef Pierre Herm, and from 1994 to 1996, he was the executive pastry chef at Fauchon's flagship shop in Qatar. From 1996 until 2001, Florian worked as Eric Ripert's pastry chef at the world-famous (3-star Michelin) restaurant Le Bernardin, where his sweets were characterized as "light and dreamy" by Ruth Reichl of The New York Times. Pastry Art & Design magazine named Bellanger one of the ten best pastry chefs in America in 2004 and 2003. Bellanger's talents were recognized by the James Beard Foundation with a nomination for Outstanding Pastry Chef in 2000 and 2001. He is a permanent judge on the hit Food Network competition series Cupcake Wars, which airs in the United States, Canada, the United Kingdom, Belgium, Hong Kong, and Singapore. He is also the Jury President of the US Pastry Competition, which is held every February in New York City, and has appeared on CNN, NBC, Food Network, and Martha Stewart Living. House Beautiful, Martha Stewart Weddings, Forbes, Brides, Modern Bride, GQ magazine, Time Out magazine, People, The New York Times, InStyle magazine, Pastry Art & Design, Food Arts, Chocolatier magazine, The Nibble, Delta Sky and New York Magazine, and PastryScoop.com have all featured Bellanger's cake and pastry creations. Bellanger is now the chef and co-owner of Mad Mac Macarons - the Authentic French Macarons and Madeleines, a well-known French cookie and pastry company he helped start in 2006.
