Stephen B. Window, who was born in England, attended culinary school in his hometown of Manchester and embarked on a career that would take him to famed restaurants all over the world. His extensive travels have given him a notable talent in a variety of foods"from the cuisine of remarkable Pacific islands to the big ideas of Escoffier"all of which are embodied in his kitchen at Roppongi. Following graduation, Window worked at a number of prestigious locations in the United Kingdom, including a stint at the venerable Stanneylands Hotel. Window developed his own culinary style there, winning Young Chef of the Year for the location and a top-five finish. Recruited by Westin Hotels Window accepted a position as Chef de Cuisine at the Westin Maui's luxury fish caf. While a gourmet specialist there, he obtained his fish directly from fishing vessels and became acquainted with previously amazing Asian fixings. The encounter would eventually lead to the Pacific Rim cuisine he now offers at Roppongi. Window's Westin residence led him to Ottawa, Kauai, and Palm Springs, all of which helped him develop his unique mark style.
