Paul Bartolotta is one of just a few chefs acknowledged as a legitimate ambassador of Italian food outside of Italy. In 1997, he was awarded the coveted Insegna del Ristorante Italiano del Mondo, which was handed to him personally by Italian President Oscar Luigi Scalfaro. Chef of Bartolotta Ristorante di Mare, Bartolotta established his culinary flair in some of Europe's most prestigious restaurants and now brings his rustic, yet refined, approach to Italian food to Wynn Las Vegas. Bartolotta Ristorante di Mare was named one of the Best New Restaurants in America by Esquire magazine in 2005, and the James Beard Foundation nominated it for Best New Restaurant in 2006. According to Bartolotta, there is no greater stage in the culinary world than Las Vegas and no better director than Steve Wynn. My objective is to enhance Italian cuisine by providing regional delicacies in a contemporary atmosphere, with a focus on seafood. Previously, Bartolotta was Chef and Managing Partner at Chicago's Spiaggia, where he led the restaurant to every major national fine dining award, including four-star ratings from both the Chicago Tribune and Chicago Magazine, between 1991 and 2000. This was the first time in any major U.S. market that an Italian chef received four stars. Bartolotta was the first Italian cook to receive the James Beard Award for Best Chef, Midwest in 1994.
