Thomas McAliney Biography

McAliney was admitted to the Culinary Institute of America in Hyde Park, New York, after completing two years of instruction there. As the first American candidate accepted to the four-star French restaurant run by Master Chef Laurent Losa, McAliney started his stage job at Restaurant Laurent in Manhattan in addition to his academic studies. After completing his education and taking the top spot in his class, McAliney joined Hotel Holdings International and worked under Chef Louis Outtier as Executive Sous Chef before becoming Chef de cuisine at the Aux Beaux Jardin Restaurant in Hong Kong, China, where Executive Chef Jean-Georges Vongerichten was in charge. While abroad, McAliney also finished many stages with Georges Blanc and at the Le Crocodile St. James restaurant in France. In 1984, McAliney moved back to the country and founded and owned McHurley's Restaurant in East Fishkill, New York. It was at this point that he discovered his enthusiasm for collaborating with nearby farmers, dairies, and vineyards to design modern dishes infused with seasonal ingredients. McAliney's restaurant won several awards when he was the proprietor, including "Best Restaurant" from 1989 to 1991 from the Hudson Valley Food and Wine Society and "Top 5 Restaurants" from 1985 to 1991 from Hudson Valley Magazine.
