Chef Spike Mendelsohn is working in the kitchen of Good Stuff Eatery in Washington, DC, a restaurant frequented by the First Family. His concept for a location where people can enjoy the nostalgia of eating the finest of their American favorites: handmade burgers, handcut fries, and handspun shakes produced with the highest quality fresh farm ingredients inspired Good Stuff Eatery. He's taken his unique approach to pizza, launching a second restaurant, We the Pizza, which has quickly become a local favorite. Spike was a fan favorite on Bravo's Top Chef's fourth season, but he believes that becoming a "Top Chef" cannot be attained on a reality program since it takes a lifetime. Mendelsohn's first actual cooking experience was when he was 13 years old. His parents owned and managed a restaurant in St. Petersburg, Florida, where he worked as a busboy and washed dishes most evenings and weekends. When one of his mother's regular saut chefs was unable to work one night in the heat of the kitchen, Mendelsohn rushed straight in to take over. There were 350 tickets available and a 45-minute wait. In the heat of the moment, his mother glanced over to the dishwashing area and indicated for him to join the line and take the position of the saut chef. His mother knew he'd be a brilliant chef one day when she watched him spinning saut pans in the air, slamming oven doors with his foot, and handling the food with care and skill.
