Charles Phan was born in South Vietnam, but after the Vietcong took over his nation, he and his family went to Guam for a short time before settling in San Francisco. In 1995, Phan launched The Slanted Door, a restaurant that defied the stereotype of an ethnic eatery. Phan notes that no one was doing a high-design, high-service Asian restaurant at the time. At The Slanted Door, instead of providing hundreds of subpar entrées, Phan focused on a modest rotating menu of authentic home-style Vietnamese cuisine. Fresh, seasonal products from small local farms were featured in his dishes, which were complemented by a diverse wine list. The Slanted Door was a huge hit right first, and restaurant writers all around the country have praised it. Phan earned the prestigious James Beard Award for Best Chef: California in 2004. All of Phan's culinary undertakings are guided by his conviction that it is the responsibility of individuals in the food industry to conserve ethnic traditions. He claims that food is history and that you can learn a lot about a society by looking at how and what people cook and consume. I'd hate to see clay pots become obsolete in the next 50 years. He opened Out The Door in 2004, Academy Cafe in 2008, Heaven's Dog in 2009, and 584 Valencia Street in 2010.
