Brendan Collins Biography

Brendan Collins is a very successful Los Angeles restaurateur and Executive Chef. He now appears as an Expert on MTV's new reality show House of Food every week. A group of aspiring chefs who have no professional culinary experience is put to the ultimate test as they live, cook, and learn together on the show. They'll be taught by three of the country's greatest chefs and have the chance to earn a once-in-a-lifetime apprenticeship. Brendan Collins, who was born in Nottingham, England, dropped out of secondary school at the age of 15 to pursue his desire of attending culinary school. He had his first work at a Michelin two-star restaurant, London's Le Gavroche when he was 17 years old. At some of London's greatest gourmet temples, such as The Café Royal, The Heights, and Pied et Terre, he continued to hone his French expertise. Collins' first executive chef job was at Leeds' The Calls Grill. In 1999, the budding dining room gained the renowned Michelin Bib Gourmand award under his guidance. Collins returned to London shortly after to work as a sous chef at the Harvey Nichols Group's Oxo Tower Restaurant before accepting a position as sous chef for famous chef Marco Pierre White at Quo Vadis. Collins was awarded one Michelin star when he was there. Collins traveled to Los Angeles in 2002 at the request of renowned chef Josiah Citrin to work as chef de cuisine at his legendary Melisse Restaurant in Santa Monica. Melisse won the Mobile Four Star Rating every year throughout his four-year stint there and was one of the first California eating places to be given a coveted Michelin two-star rating. Collins left Melisse to launch Mesa in Orange County, where he served as executive chef and the restaurant was a critical and popular hit. Collins returned to Santa Monica to collaborate with Alain Giraud on the film Anisette. He was tempted away by an offer to become executive chef at The Hall at Palihouse not long after the restaurant opened. There, he honed his unique culinary technique and established a fan base while also receiving critical praise. Collins blends his superb French technique, seasonal California ingredients, and imitative British lad attitude as Executive Chef and Proprietor at Waterloo & City to produce cuisine that is both comforting and interesting. Collins is committed to utilizing only the greatest ingredients and preparing cuisine that he enjoys, drawing on his butchery experience and belief in using the entire animal.
